What is sodium propionate?

Sodium propionate is a colorless, transparent crystal or granular crystalline powder with a slightly characteristic odor. Its monohydrate form is a colorless crystal and hygroscopic. It is soluble in water and ethanol, with a solubility of approximately 100 in 10% water (15°C), and a pH range of 8.5–10.5.

It has broad-spectrum antibacterial activity against molds, yeasts, and bacteria, and is most reactive at acidic pH levels. It is used as a food preservative, suitable for use as a preservative in pastries and as a mold inhibitor in bread. Sodium propionate is virtually non-toxic to humans. Its usage in food is the same as calcium propionate (calculated as propionic acid). The maximum permissible concentration in cosmetics is 2% (calculated as propionic acid). It is produced by neutralizing propionic acid with sodium hydroxide.
